Wild Turkey Burgers

You can make these well-spiced burgers with either turkey or pork. Serve on a bun with lettuce and tomatoes.
Ingredients
- 2 tbsp (30 mL) Bourbon or Tennessee whisky
- 2 tbsp (30 mL) tomato ketchup
- 1 tbsp (15 mL) fancy molasses
- 1 egg
- 1 small onion, minced
- 2 clove garlic, minced
- 1/4 cup (60 mL) dry bread crumbs
- 1 tbsp (15 mL) chili powder
- 1 tsp (5 mL) crumbled dried sage
- 1/2 tsp (2 mL) salt
- 1 lb (500 g) ground turkey
- 4 slices smoked cheese
- Pickled jalapeño peppers
Preparation
In large bowl, whisk together whisky, ketchup, molasses and egg; mix in onion, garlic, bread crumbs, chili powder, sage and salt. Mix in turkey; shape into 4 patties.
Pan-fry or grill over medium heat, turning halfway through and placing slice of cheese on top, until no longer pink inside and digital thermometer inserted sideways into centre reads 175F/80C, about 15 minutes. Top with peppers.
Makes 4 servings.
