Tomato Pizza Sauce

You can use this basic sauce as a base for many kinds of pizza; add
different herbs such as oregano, marjoram, rosemary or basil to taste and to complement the toppings.

Ingredients
- 1 can (28 oz/786 mL) tomatoes
- 2 tbsp (30 mL) extra-virgin olive oil
- 2 garlic cloves, minced
- Half small onion, finely chopped
- 1/2 tsp (2 mL) wine vinegar
- Pinch of sugar
- salt and pepper
Preparation
Drain tomatoes, reserving juice. Seed and chop tomatoes.
In saucepan, heat olive oil over medium heat; add garlic and onion. Fry until onion is translucent, 4 to 5 minutes. Add tomatoes, juice, wine vinegar and sugar; season with salt and pepper to taste. Simmer until thickened, about 15 minutes. If desired, process in food processor until smooth.
Makes 2 cups/500 mL.
