Strawberry Madeira Cream Slices

Sweet fortified wines, such as Port, sherry and Madeira, figure prominently in traditional English desserts. This one is easy to put together with store-bought puff pastry.
Ingredients
- 3/4 cups (175 mL) icing sugar
- 1/2 tsp (2 mL) finely grated lemon rind
- 5 tsp (25 mL) (approx) lemon juice
- 2 sheets butter puff pastry (buy 1 lb/500 g box butter puff pastry)
- Strawberry Filling:
- 1 cup (250 mL) whipping cream
- 3 tbsp (45 mL) butter, melted and cooled
- 3 tbsp (45 mL) icing sugar
- 1/4 cup (60 mL) Madeira (or sweet sherry)
- 1 lb (500 g) strawberries, sliced
Preparation
Mix together sugar and lemon rind; stir in enough lemon juice to make a spreadable icing.
Cut each sheet of pastry in half; cut each half into 4 rectangles. Thinly ice 8 of the rectangles, leaving a 1/4-inch/5 mm margin around the edges; reserve remaining icing.
Place both iced and uniced rectangles at least 1/2-inch/1 cm apart on 2 baking sheets. Bake in 400F/200C oven until pastry is puffed and crispy and icing is lightly browned, 10 to 14 minutes. Transfer pastry slices to rack; let cool.
Strawberry Filling: Whip together cream, butter and sugar until stiff. Whip in Madeira; fold in strawberries. Chill for 30 minutes or up to 4 hours.
Spread a dab of the remaining icing over each of the iced pastry slices. Spread the uniced slices with Strawberry Filling; top with iced slices.
