Steamed Mini Shrimp and Cabbage Rolls

I like to think of these tasty treats as "Swedish Siumai" a Scandinavian variation of the favourite Cantonese dim sum specialty.

Ingredients

  • 1 small Savoy cabbage
  • 1 lb  (500 g)  peeled deveined shrimp
  • Half small onion, chopped
  • 1 egg
  • 1/4 cup  (60 mL)  fresh dill
  • 3 tbsp  (45 mL)  butter
  • 2 tbsp  (30 mL)  grated fresh or prepared horseradish
  • 1/2 tsp  (2 mL)  salt
  • 1/4 tsp  (1 mL)  white pepper

Preparation

Core cabbage and separate leaves. Boil in large pot of salted water until tender, 10 to 12 minutes. Drain, chill under cold water and drain again. Pat dry with paper towels. Set aside.

In food processor, make smooth paste of shrimp, onion, egg, dill, butter, horseradish, salt and pepper.

Halve cabbage leaves by cutting out centre rib; trim outside edge to make straight edge. Depending on size of leaf, evenly spread 1 to 2 tbsp (15 to 30 mL) of shrimp mixture over all of the leaf. Roll up tightly into cylinder. Repeat with remaining shrimp mixture.

Place on steamer tray and steam over boiling water on high heat until filling in centre of roll is cooked through (check by cutting thickest one in half), about 8 minutes. Cut each roll in half.

Makes about 50 pieces.
