Spiced Asparagus

You can serve this Indian-style asparagus with a curry or to spice up any other meal.
Ingredients
- 1 lb (500 g) asparagus
- 1 tbsp (15 mL) peanut oil or vegetable oil
- 1 tsp (5 mL) each black mustard seeds and yellow mustard seeds
- 1/2 tsp (2 mL) cumin seeds
- 2 tbsp (30 mL) butter
- 1 tbsp (15 mL) lemon juice
- 1/4 tsp (1 mL) garam masala
- Pinch salt
Preparation
Snap off and discard tough ends of asparagus stalks. In pot of boiling salted water, blanch asparagus until tender-crisp. Drain, chill under cold water and drain again. Set aside.
In skillet, heat oil over medium heat; add black and yellow mustard seeds, and cumin seeds, and fry until mustard seeds begin to pop. Add butter and asparagus and sauté until asparagus is hot and tender, 2 to 3 minutes. Stir in lemon juice, garam masala and salt.
Makes 6 servings.
