Snow Peas with Ham

Just a touch of cured (not smoked) ham makes this a very tasty dish. It's best to buy a 1/4-inch/5 mm thick slice of ham at the deli counter (rather than thinly sliced packaged ham) and cut it into slivers.
Ingredients
- 2 tbsp (30 mL) peanut or vegetable oil
- 2 cloves garlic, minced
- 1/4 tsp (1 mL) salt
- 2 oz (60 g) cured ham (e.g. prosciutto or Serrano)
- 12 oz (375 g) snow peas, strings removed
- 2 tbsp (30 mL) chicken or vegetable stock
- Pinch granulated sugar
Preparation
In wok or skillet, heat oil over high heat; fry garlic and salt until fragrant but not browned, 20 to 30 seconds. Add ham; stir-fry for 10 seconds. Add snow peas and stir-fry for 30 seconds. Add stock and sugar; stir-fry until peas are tender-crisp, 1 to 2 minutes.
Makes 4 servings.
