Smoked Salmon with Shrimp Smørrebrød

Ingredients
- 2 slices whole grain rye bread
- 2 tbsp (30 mL) low-fat (0.5%) cottage cheese
- 2 leaves lettuces
- 20 very thin slices cucumber
- 3 oz (90 g) smoked salmon
- 1/3 cup (75 mL) cooked small shrimp
- 2 tbsp (30 mL) light sour cream
- 1 tbsp (15 mL) chopped fresh chives
- 2 tsp (10 mL) chopped fresh dill
- 1 tsp (5 mL) horseradish
- pinch each salt and black pepper
- 2 tbsp (30 mL) thinly sliced red onion
Preparation
Spread bread with cottage cheese; top with lettuce, then cucumber, then salmon. Mix together shrimp, sour cream, chives, dill, horseradish, salt and pepper; top salmon with shrimp mixture. Top with onion.
Makes 2 sandwiches.
