Shrimp Salad Smørrebrød

Ingredients
- 1/4 cup (60 mL) low-fat (0.5%) cottage cheese
- 2 tbsp (30 mL) light sour cream
- 2 tbsp (30 mL) finely chopped red onion
- 2 radishes, finely diced
- 1 tbsp (15 mL) chopped fresh dill
- Pinch each salt and black pepper
- 2 slices whole grain rye bread
- 20 very thin slices cucumber
- 6 oz (175 g) cooked salad shrimp (sweet northern Atlantic shrimp)
- 2 tsp (10 mL) chopped chives
- 2 tsp (10 mL) lemon juice
- Pinch salt
- 2 spears pickled asparagus, halved lengthwise, or 1 dill pickle, sliced
Preparation
Mix together cottage cheese, sour cream, onion, radishes, dill, salt and pepper; spread over bread. Top with cucumber. Mix together shrimp, chives, lemon juice and salt; mound over cucumber. Garnish with pickled asparagus.
Makes 2 sandwiches.
