Sesame Spinach

Use local bunched young spinach with tender stems for the best flavour and texture. Just trim off the roots.

Ingredients

  • 2 bunches (each 8 to 10 oz/250 to 300 g) spinach
  • 4 tsp  (20 mL)  toasted sesame seeds
  • 1 tsp  (5 mL)  sesame oil
  • 1/2 tsp  (2 mL)  fish sauce
  • 1/4 tsp  (1 mL)  granulated sugar
  • Pinch salt

Preparation

In large pot of boiling water, blanch spinach until tender; drain and chill under cold water. Drain well. Squeeze out excess liquid from spinach; transfer to bowl.

In mortar and using pestle or in spice grinder, finely grind 1 tbsp/15 mL of the sesame seeds; mix into spinach along with remaining sesame seeds, sesame oil, fish sauce, sugar and salt.

Makes 6 to 8 servings.
