Rosemary Poached Pears with Almonds

Choose pears that are ripe but not mushy. These pears are lovely with a crunchy, not-too-sweet wafer or cookie.

Ingredients

  • 1 cup  (250 mL)  granulated sugar
  • 1/2 cup  (125 mL)  blanched almonds
  • 2 strips lemons peel (about 2 inches/5 cm long)
  • 1/2 cup  (125 mL)  lemon juice
  • 1 sprig fresh rosemary
  • 6 pears, peeled, halved and cored

Preparation

In saucepan, bring sugar, almonds, lemon peel, juice, rosemary and 1-3/4 cups (425 mL) water to boil; boil until sugar is dissolved, about 2 minutes. Add pears and bring to boil; reduce heat and simmer until pears are fork-tender but not mushy, 10 to 20 minutes, depending on variety and ripeness. Let cool; refrigerate for at least 4 hours or up to 1 week.

Makes 6 servings.
