Roast Turkey Smørrebrød

Ingredients

  • 2 tbsp  (30 mL)  low-fat (0.5%) cottage cheese
  • 2 tbsp  (30 mL)  light sour cream
  • 1-1/2 tsp  (7 mL)  horseradish
  • 2 slices whole grain rye bread
  • 6 sprigs watercress
  • 2 small boiled potatoes, thinly sliced
  • 2 red radishes, sliced
  • 2 baby dill pickles, sliced
  • 3 oz  (90 g)  thinly sliced roast turkey or chicken
  • Chopped chives or green onion and/or fresh dill

Preparation

Mix together cottage cheese, sour cream and horseradish; spread over bread. Top with watercress, potatoes, radishes, pickles and turkey. Top with chives to taste.

Makes 2 sandwiches.
