Riesling-Poached Apples and Pearl Onions

These apples are a wonderful holiday accompaniment to roast pork, ham, goose or turkey. Pair them with Herb-Perfumed Roast Pork.

Ingredients

  • 4 sweet apples such as Crispin, Fuji or Golden Delicious
  • 1 pkg (10 oz/300 g) red pearl onions
  • 1-1/2 cups  (375 mL)  dry Riesling wine
  • 1/3 cup  (75 mL)  granulated sugar
  • 1/4 cup  (60 mL)  cider vinegar
  • 20 black peppercorns
  • 10 whole allspice berries
  • 2 -inch (5 cm) piece cinnamon sticks
  • 2 sprigs fresh thyme

Preparation

Peel, quarter and core apples. Peel pearl onions.

In saucepan, combine wine, sugar, vinegar, peppercorns, allspice, cinnamon and thyme; stir until sugar is dissolved. Add apples and onions; bring to boil. Reduce heat to medium-low. Simmer, covered and turning apples often, until apples are just tender, 20 to 30 minutes.

Uncover; remove apples with slotted spoon. Increase heat to medium-high; boil until liquid is syrupy and reduced to about 1/3 cup/75 mL. Return apples to sauce. Serve warm or at room temperature.

Makes 8 to 10 servings.
