Rhubarb Strawberry Ice

Ingredients

  • 4 cups  (1 L)  chopped rhubarb
  • 3 cups  (750)  sliced fully ripened strawberries
  • 1-3/4 cups  (425 mL)  water
  • 2/3 cups  (150 mL)  granulated sugar

Preparation

In saucepan, bring rhubarb, strawberries, water and granulated sugar to boil; reduce heat and simmer until fruit falls apart, about 20 minutes.

Remove from heat; let cool. Strain through fine sieve, pressing down on solids to extract liquid; discard solids. Freeze.

Makes 6 to 8 servings.
