Red Currant Vinegar

Red currant vinegar makes simple vinaigrette a thing of beauty for dressing a salad of summer greens.
Ingredients
- 1-1/2 cups (375 mL) stemmed red currants
- Generous pinch each granulated sugar and salt
- 1-1/2 cups (375 mL) white wine vinegar
Preparation
Place currants in wide-mouthed jar; sprinkle with sugar and salt. With drink muddler, potato masher or similar utensil, press and stir currants until juices run. Add vinegar; seal jar and let stand in cool, dark place for 1 week.
Set cheesecloth-lined sieve over bowl; pour currant mixture into sieve and let strain, without pressing on solids, until solids are dry, about 2 hours (discard solids). Seal in bottle or jar.
Makes about 2 cups/500 mL.
