Potato Galettes

Crispy and elegant, these potato cakes make a wonderful side for steaks or chops. Or, serve them as a first course topped with smoked fish and lemon juice.
Ingredients
- 1 lb (500 g) baking (russet) potatoes (about 2 potatoes), peeled
- 1 tbsp (15 mL) olive oil
- 1/4 tsp (1 mL) each salt and black pepper
- 1/3 cup (75 mL) sour cream
- 4 tsp (20 mL) finely chopped chives
Preparation
Using mandoline or sharp knife, cut potatoes crosswise into 1/8-inch/3 mm thick slices. Toss with oil and half of the salt and pepper.
On parchment paper-lined baking sheets, arrange overlapping potato slices into five 5-inch/12 cm circles.
Bake in 400°F/200°C oven until golden and crisp, about 35 minutes. Sprinkle with remaining salt and pepper. Top each galette with dollop of sour cream; sprinkle with chives.
Makes 5 servings.
