Poached Shrimp with Peas

Ingredients
- 1-1/2 cups (375 mL) chopped sweet onion
- 1/2 tsp (2 mL) salt
- 1 lb (500 g) shrimp, peeled and deveined
- 1 tbsp (15 mL) cornstarch
- 1-1/2 tsp (7 mL) grated gingerroot
- Pinch white pepper
- 1 egg
- 1 tsp (5 mL) sesame oil
- 2 cups (500 mL) frozen peas or lima beans, thawed
Preparation
In skillet, bring onion, half of the salt and 1 cup/250 mL water to simmer; cover and simmer for 4 minutes.
Meanwhile, mix together shrimp, cornstarch, ginger, pepper and remaining salt. In separate bowl, beat together egg, oil and 2 tbsp/30 mL water. Set aside.
Increase heat to medium-high; add shrimp mixture to pan and cook, stirring, until shrimp turn pink. Stir in peas; return to boil and cook until shrimp are cooked through and peas are hot, 1 to 2 minutes.
In thin stream, drizzle in egg mixture; heat just to simmer. Immediately transfer to serving bowl.
Makes 4 servings.
