Poached Salmon with Red Radishes

Ingredients
- 1 onion, thinly sliced
- 1 stalk celery, thinly sliced
- 6 thin slices gingerroot
- 4 sprigs parsley
- 1 tsp (5 mL) black peppercorns
- 1/2 tsp (2 mL) salt
- 4 skin-on salmon fillets (each 6 oz/175 g)
- 1 bunch red radishes, sliced (1-1/2 to 2 cups/375 to 500 mL)
- 1 tsp (5 mL) cornstarch
- 2 tsp (10 mL) lemon juice
- 2 green onions, thinly sliced
Preparation
In pot large enough to accommodate salmon in single layer, scatter onion, celery, ginger, parsley, peppercorns and salt; add 3 cups/750 mL water and bring to boil. Cover, reduce heat and simmer for 5 minutes.
Immerse salmon; cover and poach just below simmer just until salmon flakes easily with fork in thickest part, about 8 minutes. With slotted spatula, remove salmon; skin and return skin to pot. Transfer salmon to serving platter or 4 plates; keep warm.
Over high heat, boil cooking liquid until reduced to about 1 cup/250 mL; through cheesecloth-lined sieve, strain cooking liquid and return to pan. Add radishes; simmer until tender, 4 to 5 minutes.
Stir cornstarch with just enough water to make thin paste; stir into radish sauce and simmer for 1 minute. Stir in lemon juice and green onions. Spoon over salmon.
Makes 4 servings.
