Peach or Mango Salsa

All kinds of fruit salsas can be made as variations of this one. Just replace one or both of the peaches or mangoes with pineapple, papaya, kiwi fruit, melon or apricots. For a black bean variation, replace one peach or mango with 1 cup (250 mL) drained canned black beans.

Ingredients

  • 2 firm ripe peaches or mangoes, peeled and chopped
  • 1 sweet  red pepper, seeded and chopped
  • 2 green onions or 1 small red onion, chopped
  • 1 small  jalapeño pepper or other chile pepper , seeded and minced
  • 2 tbsp  (30 mL)  chopped fresh coriander, parsley or mint
  • 2 tbsp  (30 mL)  lime juice or lemon juice
  • 1 tbsp  (15 mL)  olive oil
  •  Salt and pepper to taste

Preparation

In bowl, combine all ingredients, stirring gently to mix well. Can be refrigerated, covered, for up to 2 days.

Makes 3 cups (750 mL).
