Niçoise Burgers
This quick and easy supper is a winner summer or winter.
Ingredients
- 2 eggs
- 1/3 cup (75 mL) dry bread crumbs
- 1 tbsp (15 mL) mayonnaise
- 1 tsp (5 mL) Dijon mustard
- 1 clove garlic, minced
- 1/4 cup (50 mL) finely chopped black olives
- 1/4 tsp (1 mL) pepper
- 1/4 tsp (1 mL) anchovy paste
- 2 cans (6.5 oz/170 g each) water-packed tuna
- 1 tomato, seeded and chopped
- 1 tbsp (15 mL) vegetable oil
- 4 whole wheat kaisers or hamburger buns
- alfalfa sprouts lettuce (optional)
- mayonnaise (optional)
Preparation
Beat eggs and mix in crumbs, mayonnaise, mustard, garlic, olives, pepper and anchovy paste. Drain tuna and break into pieces using a fork.
Stir tuna and tomatoes into crumb mixture. Shape into four patties, each aobut 1/2-in (1-cm) thick.
Heat a non-stick skillet over medium heat. Add oil and cook burgers, turning once, for 10 minutes or until golden brown. Place on buns and top with sprouts. Serve with extra mayonnaise on the side, if you like.
Makes 4 burgers.
