Mint and Lime Ice

Ingredients

  • 2-1/2 cups  (625 mL)  water
  • 1-1/2 cups  (375 mL)  packed brown sugar
  • 1 cup  (250 mL)  packed mint leaves
  • 2 strips lime rind 2-inch (5 cm) long
  • 3/4 cups  (175 mL)  lime juice

Preparation

In saucepan, bring water and brown sugar to boil, stirring until sugar is completely dissolved. Remove from heat; add mint leaves and lime rind.

Cover and let cool. Stir in lime juice. Strain; discard solids. Freeze.

Makes 6 to 8 servings.
