Lightened-Up Peach Melba

Nowadays, even opera singers are trying to be svelte, so one can imagine Dame Nellie Melba appreciating this lightened-up version of the 19th-century dessert named after her.
Ingredients
- 1 batch Wine-Poached peaches
- 1-1/2 cups (375 mL) fresh raspberry
- 2 cups (500 mL) low-fat vanilla frozen yogurt
Preparation
Using slotted spoon, divide peaches among four serving bowls. Press 1 cup (250 mL) of the raspberries through sieve into bowl; discard seeds. Mix pulp with 1 tbsp (15 mL) of the syrup from peaches. For each serving, scoop 1/2 cup (125 mL) frozen yogurt over 2 peach halves, drizzle with sauce and top with a few of the remaining berries.
Makes 4 servings.
