Lemon Sage Pork Chops
The unique fragrance and flavour of fresh summer sage is a natural partner for pork.
Ingredients
- 1 tsp (5 mL) finely grated lemon rind
- 2 tbsp (30 mL) lemon juice
- 4 tbsp (60 mL) olive oil
- 2 tbsp (30 mL) minced fresh sage leaves (Substitute 2 tsp/10 mL crumbled dried sage)
- 3 cloves garlic, pressed, grated or pounded into paste
- 1 tsp (5 mL) paprika
- 1 tsp (5 mL) salt
- 1/2 tsp (2 mL) black pepper
- 6 to 8 bone-in pork loin chops (about 3 lb/1.5 kg)
Preparation
Mix together lemon rind, lemon juice, 2 tbsp/ 30 mL of the oil, sage, garlic, paprika, salt and pepper. Rub all over pork. Marinate for 1 hour or refrigerate for up to 24 hours.
Cook pork on greased grill over medium-high heat, turning once and basting occasionally with remaining oil, just until no longer pink in centre, 15 to 20 minutes.
Makes 6 to 8 servings.
