Herring Salad Smørrebrød

Ingredients

  • 3 oz  (90 g)  pickled herring, finely chopped (1/3 cup/75 mL)
  • 3 tbsp  (45 mL)  finely diced pickled beets
  • 2 tbsp  (30 mL)  finely diced white or sweet onion
  • 2 tbsp  (30 mL)  finely diced apple
  • 1 tsp  (5)  juice from pickled beets
  • 2 slices whole grain rye bread
  • 1 hard-cooked egg, cut into wedges
  • 2 tbsp  (30 mL)  light sour cream
  • Fresh dill sprigs
  • Freshly ground black pepper

Preparation

Mix together herring, beets, onion, apple and beet juice; spread over bread. Top with egg and then sour cream. Garnish with dill sprigs and sprinkle with pepper to taste.

Makes 2 sandwiches.
