Grilled Quails

Quail might not be available in your local supermarket, but you can buy it from specialty butchers and Chinese stores. Don’t overcook quail or it will dry out.
Ingredients
- 1/4 cup (60 mL) Korean Barbecue Sauce
- 2 green onions, minced
- 2 tsp (10 mL) Korean ground hot pepper
- 2 tsp (10 mL) toasted sesame seeds
- 2 tsp (10 mL) sesame oil
- 6 quails
Preparation
Stir together Korean Barbecue Sauce, green onions, ground hot pepper, sesame seeds and sesame oil.
With scissors, cut down both sides of quails' backbones and remove; press quails lightly to flatten. Coat quails in sauce mixture; marinate for 30 minutes or refrigerate for up to 3 hours.
Grill over medium-high heat, turning once, until skin is crispy and breast is still pink in centre of thickest part, 12 to 15 minutes.
Makes 6 pieces.
