Grilled Jumbo Shrimp with Green Onion Sauce
Grilling shrimp with the shells on allows the shrimp to retain their juices. The method makes for friendly, hands-on eating; just peel the shrimp and dip them in the sauce.
Ingredients
- 2 lbs (1 kg) deveined shell-on jumbo shrimp or colossal shrimp
- 1/4 tsp (1 mL) salt
- Green Onion Sauce:
- 2 tbsp (30 mL) olive oil
- 2 tbsp (30 mL) butter
- 5 green onions, minced
- 2 tbsp (30 mL) minced parsley
- 2 cloves garlic, minced
- 1/2 tsp (2 mL) lightly crushed fennel seeds (Substitute cumin or caraway seeds)
- 1/2 tsp (2 mL) salt
- 1/2 tsp (2 mL) coarsely ground black pepper
- 1 tbsp (15 mL) lemon juice
Preparation
Green Onion Sauce: In small saucepan, heat oil and butter over medium heat; add onions, parsley, garlic, fennel seeds, salt and pepper. Fry, stirring, until onions are soft and mixture is fragrant, 3 to 4 minutes. Remove from heat; stir in lemon juice. Keep warm on side of grill.
Sprinkle shrimp with salt; cook on greased grill over high heat, turning once, until no longer translucent in centre of thickest part, 3 to 8 minutes (depending on thickness). Serve with Green Onion Sauce.
Makes 6 to 8 servings.
