Like all game meat, caribou is exceptionally tasty, but it is also very lean, so a little bacon improves the texture. Use a gin with a good, strong juniper berry flavour, such as Beefeater or Gordon's. Serve the burgers on buns with hot mustard and pickles.

Ingredients
- 1 lb (500 g) ground caribou, elk, venison, moose or other game meat
- 1/4 cup (60 mL) gin
- 1-1/2 tsp (7 mL) Worcestershire sauce
- 1/2 tsp (2 mL) salt
- 1/4 tsp (1 mL) black pepper
- 4 oz (125 g) bacon, diced
- 1 onion, finely chopped
Preparation
Mix together caribou, gin, Worcestershire sauce, salt and pepper; refrigerate for 2 to 8 hours.
In skillet over medium heat, fry bacon until crispy; add onion and fry until golden. Let cool. Scrape over caribou mixture; mix until combined. Form into 4 patties.
Grill patties on greased grill, or fry in greased skillet, over medium heat, turning once, until no longer pink inside or meat thermometer registers 160°F/71°C, about 15 minutes.
Makes 4 burgers
