Farmer's Salad

This salad and spread in one is a traditional springtime treat in Polish and eastern European Jewish traditions. Serve it with fresh dark rye bread or with hard-cooked eggs for a wholesome lunch.
Ingredients
- 1-1/4 cups (300 mL) finely diced or shredded radishes
- 1 cup (250 mL) finely diced seeded cucumber
- 8 oz (250 g) dry pressed or creamed cottage cheese
- 1/2 cup (125 mL) light or regular sour cream
- 3 green onions, thinly sliced
- 1/2 tsp (2 mL) salt
- Freshly ground black pepper
Preparation
Mix together radishes, cucumber, cottage cheese, sour cream, green onions and salt; add pepper to taste.
Makes 4 servings.
