Egg Salad with Prosciutto or Ham Smørrebrød

Ingredients
- 2 slices whole grain rye bread
- 2 tsp (10 mL) butter (optional)
- 2 leaves radicchio or other lettuce
- 6 sprigs watercress
- 3 hard-cooked eggs, chopped
- 3 tbsp (45) finely chopped sour gherkins or dill pickle
- 3 tbsp (45 mL) light sour cream
- 2 tbsp (30 mL) finely sliced green onion
- 1-1/2 tsp (7 mL) Dijon mustard
- 1/4 tsp (1 mL) black pepper
- Pinch salt
- 6 cherry tomatoes, halved
- 2 thin slices prosciutto or ham
Preparation
Spread bread with butter, if desired; top with radicchio and watercress.
Mix together eggs, gherkins, sour cream, onion, mustard, pepper and salt; mound over watercress. Top with tomatoes and prosciutto.
Makes 2 sandwiches.
