Egg Salad with Prosciutto or Ham Smørrebrød

Ingredients

  • 2 slices whole grain rye bread
  • 2 tsp  (10 mL)  butter (optional)
  • 2 leaves radicchio or other lettuce
  • 6 sprigs watercress
  • 3 hard-cooked eggs, chopped
  • 3 tbsp  (45)  finely chopped sour gherkins or dill pickle
  • 3 tbsp  (45 mL)  light sour cream
  • 2 tbsp  (30 mL)  finely sliced green onion
  • 1-1/2 tsp  (7 mL)  Dijon mustard
  • 1/4 tsp  (1 mL)  black pepper
  • Pinch salt
  • 6 cherry tomatoes, halved
  • 2 thin slices prosciutto or ham

Preparation

Spread bread with butter, if desired; top with radicchio and watercress.

Mix together eggs, gherkins, sour cream, onion, mustard, pepper and salt; mound over watercress. Top with tomatoes and prosciutto.

Makes 2 sandwiches.
