Tomato Mint Salsa

A perfect salsa for grilled lamb, this one also goes well with pork, chicken and liver.

Ingredients

  • 1 cup  (250 mL)  chopped sweet onion
  • 2/3 cups  (150 mL)  loosely packed fresh mint
  • 1/3 cup  (75 mL)  chopped fresh coriander
  • 2 jalapeno peppers, seeded and chopped
  • 1 tsp  (5 mL)  grated gingerroot
  • 1-1/2 cups  (375 mL)  coarsely chopped seeded peeled tomatoes
  • 1 tbsp  (15 mL)  lemon juice
  • Salt, pepper and granulated sugar

Preparation

In food processor, mix together onion, mint, coriander, hot peppers, ginger, 1/2 tsp (2 mL) salt, 1/4 tsp (1 mL) pepper and pinch of sugar. Pulse in tomatoes and lemon juice until finely chopped.

Makes 2-1/3 (575 mL) cups.
