Sweet and Savoury Puffed Brown Rice Energy Bars

If you can’t find roasted nori, use tongs to hold regular nori a few inches over a hot burner and toast it on both sides until fragrant. Whole grain puffed brown rice is available in bulk food stores.

Ingredients

  • 1 tsp  (5 mL)  (approx) sesame oil
  • 4 cups  (1 L)  puffed brown rice
  • 1 cup  (250 mL)  dry-roasted peanuts
  • 1/2 cup  (125 mL)  toasted sesame seeds
  • 1/2 cup  (125 mL)  toasted sunflower seeds
  • 4 roasted sheets nori (each 7 inches/18 cm square), crumbled
  • 1 cup  (250 mL)  liquid honey or creamed honey
  • 3/4 tsp  (4 mL)  sea salt
  • 1/4 tsp  (1 mL)  cayenne pepper

Preparation

With oil, grease a large mixing bowl and a 13- x 9-inch/33 x 23 cm baking dish. To bowl, add puffed rice, peanuts, sesame seeds, sunflower seeds and nori. Mix well.

In large saucepan to avoid a mess on the stove (honey increases in volume when boiled), boil honey, salt and cayenne over medium-high heat, without stirring, until reduced to 3/4 cup/175 mL, about 5 minutes.

Stir honey mixture into puffed rice mixture; immediately scrape into prepared baking dish. Press down and smooth top. Let cool completely.

With oiled knife, cut into eighteen 4-1/2- x 1-1/2-inch/11 x 4 cm bars. Store in airtight container for up to 1 month.

Makes 18 bars.
