Steamed Pickerel Fillet

Simplicity exemplified, this dish contains no added oil. For best results, use a good-quality balsamic vinegar.

Ingredients

  • 1 lb  (500 g)  pickerel fillet
  • 5 green onions, julienned
  • 1/2 tsp  (2 mL)  salt
  • 1/3 cup  (75 mL)  balsamic vinegar
  • 1/4 tsp  (1 mL)  black pepper

Preparation

Place pickerel fillet on heatproof plate; sprinkle onions and salt over top. Steam on steamer rack set over boiling water until fish flakes easily, 8 to 10 minutes.

Meanwhile, in small skillet, boil vinegar and pepper over medium-high heat until reduced to generous 2 tbsp/30 mL, about 7 minutes. Remove fish from steamer and pour off any liquid. Drizzle vinegar mixture over fish.

Makes 4 servings.
