Spiced Roasted Carrots

This simple side dish is bursting with a satisfyingly piquant flavour. Diners can squeeze the tender roasted garlic cloves out of their skins.
Ingredients
- 4 tsp (20 mL) vegetable oil
- 1 tsp (5 mL) ground cumin
- 1/2 tsp (2 mL) salt
- 1-1/2 lbs (750 g) carrots
- 12 cloves garlic, unpeeled
- 4 hot red peppers, halved and seeded
Preparation
In bowl, mix together oil, cumin and salt. Halve large carrots lengthwise; cut into 2-inch (5 cm) chunks. Add to bowl along with garlic. Mix until evenly coated. Scrape into 13- x 9-inch (3 L) baking dish; bake in 400°F (200°C) oven for 20 minutes. Stir in hot peppers; bake until carrots are tender and lightly browned, about 20 minutes.
