Smoky Beef Burgers with Chipotle Ketchup

For a smoky cheeseburger, melt some old Cheddar on top of this burger and serve it in a kaiser or hamburger bun with lettuce and pickles. If you can get ground bison (buffalo), try it; it's the best!
Ingredients
- 1 tbsp (15 mL) butter
- 3 oz (90 g) double-smoked bacon, finely chopped
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- 3 tbsp (45 mL) dry red wine
- 1/2 tsp (2 mL) each salt and black pepper
- 1 lb (500 g) ground beef or bison
- Chipotle Ketchup:
- 1 canned chipotle chipotle peppers, minced
- 1 tbsp (15 mL) adobo sauce from canned chipotles
- 1/3 cup (75 mL) ketchup
Preparation
Chipotle Ketchup: Combine chipotle pepper, adobo sauce and ketchup.
In small skillet, cook butter and bacon over medium-high heat until bacon fat is rendered; sauté onion and garlic until onion is golden, about 3 minutes. Scrape into bowl; let cool. Mix in egg, wine, salt and pepper. Mix in beef; shape into 4 patties.
Pan-fry or grill over medium heat, turning once, until no longer pink inside and digital thermometer inserted sideways into centre reads 160F/71C, about 15 minutes. Serve with Chipotle Ketchup.
