Roasted Arctic Char Fillets with Brown Butter

Ingredients
- 1/3 cup (75 mL) unsalted butter
- 1 large shallot, thinly sliced
- 2 cloves garlic, thinly sliced
- 1/2 tsp (2 mL) (approx) salt
- 2 tsp (10 mL) lemon juice
- 2 arctic char fillets (about 12 oz/375 g each)
- Pinch white pepper
- 2 tbsp (30 mL) finely chopped parsley
Preparation
In small saucepan, melt butter over medium heat; cook, stirring, until butter begins to brown, 2 to 3 minutes. Stir in shallot, garlic and pinch salt; cook until softened, about 1 minute. Remove from heat; stir in lemon juice.
Using some of the butter mixture, lightly coat bottom of baking dish large enough to snugly fit both fillets. Arrange fillets, skin side down, in dish; sprinkle with 1/2 tsp/2 mL salt and pepper. Spoon remaining butter mixture over top; sprinkle with parsley.
Roast in 425°F/220°C oven until fish flakes easily when tested, about 8 minutes per 1/2 inch/1 cm thickness.
Makes 4 servings.
