Rhubarb Strawberry Ice

Cool your palate with this tart fruity ice.

Ingredients

  • 4 cups  (1 L)  chopped rhubarb
  • 3 cups  (750)  sliced fully ripened strawberries
  • 2/3 cup  (150 mL)  granulated sugar

Preparation

1. In saucepan, bring rhubarb, strawberries, 13/4 cups/425 mL water and sugar to a boil; reduce heat and simmer until fruit falls apart, about 20 minutes.

2. Remove from heat; let cool. Strain through fine sieve, pressing down on solids to extract liquid; discard solids. Freeze until solid, 6 to 8 hours or overnight.
