Indian-Style Sautéed Peas

Common frozen peas are given exciting flavour with this Indian-style preparation. For the most flavour, use a combination of coriander and mint.
Ingredients
- 1 tsp (5 mL) cumin seeds
- 1 cup (250 mL) chopped white onion
- 1 hot green pepper, chopped
- 1 cup (250 mL) chopped fresh coriander and/or mint (or 2 tsp/10 mL dried mint)
- 3 cups (750 mL) frozen peas, thawed
- 3/4 tsp (4 mL) Garam masala (or 1/4 tsp/1 mL curry paste)
- 1/2 cup (125 mL) full-fat yogurt (at room temperature)
- Vegetable oil, salt and granulated sugar
Preparation
In skillet, heat 2 tbsp (30 mL) vegetable oil over medium-high heat; fry cumin seeds until popping, about 10 seconds. Add onion and hot pepper; sauté until onion is soft, about 4 minutes. Add half of the coriander and/or mint, 1/2 tsp (2 mL) salt and generous pinch of sugar; sauté for 1 minute.
Stir in peas and 1/4 cup (60 mL) water; cook until liquid is evaporated and peas are heated through, 2 minutes. Stir in garam masala; remove from heat. Stir in yogurt and remaining coriander and/or mint.
