Green Asparagus with Ginger Butter

If you are using thick asparagus, peel stalks about two-thirds up the stalk toward the tip.

Ingredients

  • 1 lb  (500 g)  green asparagus, trimmed
  • 2 tbsp  (30 mL)  butter
  • 1 tsp  (5 mL)  grated gingerroot
  • 1/4 tsp  (1 mL)  each salt and granulated sugar

Preparation

In skillet over medium heat, boil asparagus in lightly salted water until tender-crisp, 3 to 8 minutes depending on thickness. Drain and return to skillet with butter, ginger, salt and sugar. Fry, stirring occasionally, until glazed, 2 to 3 minutes.

Makes 4 servings.
