Greeks are second only to Italians in their love of pasta. Here is a Greek-style pasta sauce that will please everyone. For convenience, we’re calling for ground beef only, but a combination of ground pork and beef or lamb would be delicious in the sauce.
Ingredients
- 2 tbsp (30 mL) olive oil
- 2 tbsp (30 mL) butter
- 1 onion, finely chopped
- 1 lb (500 g) lean ground beef
- 2 cloves garlic, minced
- 1/4 tsp (1 mL) black pepper
- 2 leeks (white and light green parts only), chopped
- 1 stick cinnamon
- 1 bay leaf
- 1/2 cup (125 mL) dry white wine
- 1 tbsp (15 mL) wine vinegar
- 1 can (796 mL) whole tomatoes
- 2 tsp (10 mL) crumbled dried mint
- 1 tsp (15 mL) salt
Preparation
In large saucepan, heat oil and butter over medium-high heat; fry onion until golden. Add beef, garlic and pepper; increase heat to high and sauté, stirring and breaking up with wooden spoon, until beef is seared, 2 to 3 minutes.
Add leeks; sauté until leeks are softened and beef is beginning to brown, about 6 minutes. Stir in cinnamon, bay leaf, wine and vinegar; cook until liquid has evaporated. Stir in tomatoes, mint and salt, coarsely breaking up tomatoes; reduce heat to low and simmer, covered, for 45 minutes. Remove bay leaf and cinnamon stick.
Makes 4 to 6 servings.
