Goat Cheese and Radish Spread

This simple goat cheese spread suits children's taste buds and is a good offering when your other appetizers are more strongly-flavoured. Spread on toasted baguette slices and garnish with sprigs of fresh chervil or parsley.

Ingredients

  • 3/4 cups  (175 mL)  quartered red radishes
  • 2 green onions
  • 10 oz  (300 g)  soft unripened goat cheese
  • 3 tbsp  (45 mL)  whipping cream or sour cream
  • 1/2 tsp  (2 mL)  grated lemon rind
  • 2 tsp  (10 mL)  lemon juice
  • 1/4 tsp  (1 mL)  black pepper
  • Salt

Preparation

In food processor, pulse radishes until finely chopped; slice onions into paper-thin rings. Set aside.

Mash together cheese, cream, lemon rind and juice, pepper and salt (to taste). Stir in radishes and onions.

Makes 1-3/4 cups/425 mL, enough for 16 to 20 pieces.
