Even though this simple, appealing bread dish is a traditional treat from Catalonia in northeastern Spain, it goes remarkably well with the southeast Asian–inspired Spiced Rack of Lamb and Thai Peach Crab Salad. You will want to make it with many other grilled dishes as well.
- 1 baguette, halved lengthwise
- 1 large clove garlic, halved
- 1 ripe tomato, halved
- 1 tbsp (15 mL) extra-virgin olive oil
- pinch sea salt
Toast baguette on grill until cut sides are crispy. Rub garlic over cut sides; rub tomato over cut sides. Sprinkle with oil and salt. Cut into pieces.
Makes 6 to 8 servings.
