In a marketplace where so many products are striving to go green, honey is already there. It is, in essence, a byproduct that makes virtually no negative impact on the environment around the hives. Honeybees rely on existing local crops or wildflowers for nectar while contributing an estimated more than $2 billion to Canadian agriculture through crop pollination.
Can I substitute sugar with honey in recipes? Honey contains more moisture than sugar, so the amount of liquid in baking recipes will have to be reduced by approximately one-quarter. Substituting honey for sugar will make baked goods brown faster, so try lowering the oven temperature by 25˚F/4˚C degrees to prevent goodies from coming out darker than you'd like.
