Wonderful and slightly bitter, curly endive, escarole and dandelion greens are often given short shrift in Canadian kitchens. Too bad: they are delicious as well as high in folic acid, calcium, potassium and vitamin A. Cultivated dandelion greens are long, straight and easy to clean; you can also pick wild dandelions from an unsprayed lawn or field before any buds open (be sure to wash them in three changes of cold water).
