Like the rest of the world, the Swiss have been lightening up their food. However, they still love their cheese, and our starter of Cheese Croûtes is proof. However, when it comes to meat fondue, they have changed their habits from cooking the meat and vegetables in hot oil to simmering them in broth, Chinese style -- hence the name, "Fondue Chinoise." And, as the Swiss are great lovers of travelling, Asian flavours have begun to influence their cooking as well.
