Make these easy roll-ups in the morning and refrigerate. Once guests arrive, pop them on the grill again over medium heat for about 8 minutes. You'll crisp up the tortillas, making a nice contrast with the moist filling. Leftovers make great grab-and-go lunches!

You don't need a huge backyard to ignite your summer party with the spirit of the Caribbean. Throw open the doors to your patio, balcony, deck or front porch and try some of these fun party-decor ideas.

• String lights in bright colours add just the right amount of twinkling fun. Wind them up trees, through potted plants, over door and window frames, wherever. Source funky strings of plastic chilies, paper lanterns and palm trees at bigislandparty.com.
• Have plenty of brightly patterned paper plates, cups and napkins on hand. Don't bother matching designs; go for clashing patterns and colours.
• Plan on partying into the night? Keep revellers well hydrated with nonalcoholic beverages such as ginger beer and coconut water. Serve them in acrylic cola cups with built-in LED lights that flash bright colours!
