Chili is always a popular choice for entertaining and is easy to make ahead and reheat. Serve it with plenty of white or brown rice on the side.
Chili-enhanced meals
The flavours of a delicious chili con carne are all here in this meat loaf. The canned green chilies and chipotle chilies in adobo sauce are available at most grocery stores. If you can't find the green chilies, grill two or three jalapeƱo chilies over a flame until the skins are black; peel, seed and chop them.
Various chili peppers flavour these beans: smoky and hot chipotles, bright and fresh jalapeƱos, and sweet and earthy ancho peppers.

New Mexico dried red chilies (available in many supermarkets or gourmet stores, usually under the Frida's label), or Mexican Guajillo peppers, make an unbelievably rich sauce, which is the base for many dishes in that border state. Although beans are not normally added to red chili stews in New Mexico, their addition makes a satisfying dish without too much meat. You can substitute beef or venison for the lamb. This is a good party dish; serve it with corn, wheat or sprouted grain tortillas or rice. This is a medium-hot version; you can adjust the ratio of mild and hot chilies to taste.
Chili pepper alternates to classic chili
A tablespoon of minced red chilies spices up with seafood dish to perfection.
Here, a turkey is marinated with a fragrant Mexican-inspired red chili sauce. You serve the turkey already carved and slathered in its pan juices. It's an easy make-ahead main course -- you can roast the turkey the day before, carve it, cover it with its sauce and refrigerate it in a roasting pan covered with foil. Reheat in 350F (180C) oven. If you like, serve the turkey with warmed corn or wheat tortillas. Adjust the amount of hot and mild dried hot peppers to taste.
