Chorizo Patties

Many South American feasts, especially in Argentina and Chile, involve a mixed grill, including chorizo (sausage). Here the flavour of Argentinian chorizo is replicated in a patty.

Ingredients

  • 1/3 cup  (75 mL)  dry red wine
  • 2 cloves garlic, minced
  • 1 tbsp  (15 mL)  paprika
  • 3/4 tsp  (4 mL)  salt
  • 1 tsp  (5 mL)  ground coriander
  • 1/2 tsp  (2 mL)  each nutmeg and white pepper
  • 1/8 tsp  (0.5 mL)  each cayenne pepper and cloves
  • 1/3 cup  (75 mL)  finely diced salt pork
  • 1-1/3 lbs  (670 g)  lean ground pork
  • 2/3 lbs  (350 g)  lean ground beef

Preparation

In large bowl, whisk together wine, garlic, paprika, salt, coriander, nutmeg, pepper, cayenne and cloves; add salt pork and marinate for 30 to 60 minutes. Mix in pork and beef. Cover and refrigerate for at least 1 day or up to 3 days.

Shape into 16 small or 8 medium patties. Grill on greased grill over medium heat, turning once, until no longer pink inside and thermometer inserted in centre reads at least 160F (71C), about 15 minutes.
