Crispy Potato Pancake

Ingredients

  • 4 potatoes
  • 1 onion, chopped
  • 1/4 tsp  (1 mL)  each salt and pepper
  • 4 tsp  (20 mL)  butter

Preparation

Peel and coarsely grate potatoes; mix with onion, salt and pepper.

In large nonstick skillet, melt butter over medium heat; add potato mixture and press down firmly with flat spatula. Reduce heat to medium-low, cover and cook until bottom is browned and crusty, about 12 minutes. Flip pancake; cook, uncovered, until bottom is nicely browned, about 7 minutes.
