Southerners love gravy with their fried chicken – a decadent habit worth importing.
Ingredients
- 3 tbsp (45 mL) bacon drippings or vegetable oil
- 1/3 cup (75 mL) all-purpose flour
- 3 cups (750 mL) reserved stock
- 1/3 cup (75 mL) milk, whipping or light cream
- Salt and black pepper
Preparation
In saucepan, heat drippings over medium heat; cook flour, stirring, until golden brown, about 3 minutes. Slowly whisk in stock; bring to boil, stirring. Reduce heat to medium-low; simmer, stirring occasionally, until thickened, 5 to 10 minutes.
Stir in milk and return to boil. Season with salt and pepper to taste.
