Cranberry Applesauce with Port

Beautifully coloured, this applesauce has real holiday flair. Serve it with roast turkey or other poultry, ham or pork.
Ingredients
- 4 apples, peeled and cored
- 1 cup (250 mL) cranberries
- 1/2 cup (125 mL) ruby port or tawny port
- 1/4 cup (60 mL) (approx) granulated sugar (increase to 1/3 cup/75 mL if apples are tart)
- 1 tsp (5 mL) grated orange rind
- Pinch salt
Preparation
In saucepan, combine apples, cranberries, port, sugar, orange rind and salt; cover and simmer until fruit is tender, about 20 minutes.
Uncover; simmer until thickened, 3 to 5 minutes. Let cool. (Make-ahead: Refrigerate for up to 1 week.) Serve at room temperature.
Makes about 2-1/2 cups (625 mL).
