Coriander and Dill Chicken

Tossing chicken in a baking dish with fresh herbs and flavourings is all it takes to make this delicious Lebanese-style chicken.
Ingredients
- 1 small onion, minced
- 4 green onions, minced
- 4 cloves garlic, minced
- 1 cup (250 mL) finely chopped fresh coriander
- 1/2 cup (125 mL) finely chopped fresh dill
- 1/4 cup (60 mL) lemon juice
- 3 tbsp (45 mL) extra-virgin olive oil
- 3/4 tsp (4 mL) salt
- 1/2 tsp (2 mL) black pepper
- 1/2 tsp (2 mL) ground cumin
- 1/4 tsp (1 mL) cayenne pepper
- 3 lbs (1.5 kg) chicken pieces, or 1 chicken, cut into pieces
Preparation
In baking dish large enough to hold chicken, mix together onions, garlic, coriander, dill, lemon juice, oil, salt, pepper, cumin and cayenne; add chicken, turning to coat in mixture and arranging pieces skin side up.
Roast in 350F/180C oven, basting often with juices after 30 minutes, until golden brown and no longer pink inside and juices run clear when chicken is pierced, about 1-1/4 hours.
Makes 4 servings.
